BORN IN   SCIENCE.

BREWED BY NATURE.

IT’S SCIENCE. IT’S REBELLION. IT’S BEER REIMAGINED.

ABOUT PHYSBEER

WE’RE PHYSBEER, A MICRO-BREWERY BORN FROM A GROUP OF AGRI-NERDS AND ECO-PUNKS.

WHO DECIDED THAT BEER SHOULD DO MORE THAN TASTE GOOD - IT SHOULD MEAN SOMETHING..

Our mission is to flip the brewing industry upside down by turning waste into value, CO₂ into life, and water into a closed loop of sustainability. We craft vegan, functional beer with algae, curiosity, and a bit of rebellion.

We don’t just make beer — we experiment, question, and occasionally blow things up (in a controlled environment).

THE FIRST ECO-FUNCTIONAL BEER

MEET

GRINIA

the first beer engineered with:

  • negative CO₂ footprint

  • boosted nutritional profile (enriched with proteins, vitamins, and trace minerals)

Grinia isn’t just brewed — it’s designed. It was born from the belief that innovation doesn’t have to taste bland and sustainability shouldn’t feel boring.

With Grinia, brewing stops being a linear process and becomes a living ecosystem.

And the name? Grinia — a witty wordplay. We took “Γκρίνια” (whining) and turned it into greening. Less talk, more fermentation.

For now, Grinia is a concept brew — a sharp, unapologetic glimpse into what’s coming next: eco-functional, science-forward, and playfully disruptive.
Soon, it’ll be the beer you drink with pride… and a tiny, satisfied smirk.

BEER MEETS BIOLOGY

Close-up of two golden wheat stalks against a transparent background.

We met in the lab - surrounded by barley samples, pipettes, and beers. We’ve studied barley from the cell to the field, and somewhere between growth cycles and late-night lab work, we asked ourselves what’s next?

The answer, as always, was barley.

That’s how PhysBeer began: as a tiny academic challenge with a big, rebellious vision - to craft a beer that’s alive, circular, and kind to the planet. We’re not entrepreneurs in suits. We’re scientists in lab coats and Wellies, brewing with curiosity, data, and just the right amount of chaos. Because the future of beer is smart, sustainable, and slightly carbonated.

WHO ARE WE?

We’re four science-driven minds who decided to brew something that goes beyond taste:

SMALL BREWERY. BIG IMPACT. BOLD MOVEMENT.

  • Smiling woman with shoulder-length dark hair wearing a beige turtleneck and white jacket, standing in front of a green brick wall with colorful graffiti.

    Andriana Karahaliou

    PhD CANDIDATE

The silent power behind the controlled chaos.

  • A woman with long dark hair, wearing a white lab coat and gold earrings, stands against a green brick wall with some graffiti. She is holding a brown glass bottle with a green cap in her right hand and has her arms crossed.

    Maria Karakasilioti

    MSc

The plant whisperer who gives roots a reason to grow.

  • A smiling man with a beard and mustache, crossed arms, standing in front of a green brick wall with graffiti.

    Yorgis Papalekakos

    UNDERGRADUATE EXPLORER

The curious one who treats brewing like fieldwork.

  • A young woman with shoulder-length light brown hair, smiling and crossing her arms while holding a brown glass bottle with a green cap. She is wearing a white lab coat over a maroon hoodie and standing against a green brick wall with red graffiti.

    Elizoe Arnellou

    UNDERGRADUATE DREAMER

    The creative catalyst of fermentations.

We’re brewing something that’s equal parts science, beer, and rebellion. If you believe sustainability shouldn’t be boring - or that beer can fix things - we’d love to connect. Open to early-stage support, collaborations, and investment - from pre-seed funding to equipment sponsorships and R&D.
